薪を使用した料理を主とした薪火レストラン。
店名の由来は、ギリシア語で「炉の女神」らしい。
日本古来のUMAMIスープで先ずは体をデトックスして綺麗に、火と薪のリラックス空間で、原始的な調理法の薪火で焼き上げてくれる。薪焼きブームの最中にあって本格的な料理をリーズナブルな価格で楽しめるのが嬉しい。
・UMAMIスープ
海、山、畑の三つの「うま味」を混ぜ合わせたシグネチャースープ。
・『京都』老舗鰹節メーカー福島鰹の荒枯節と、京都で水揚げされた『さわら』を良質な北海道産昆布で合わせたもの
・７種類の高級乾燥キノコに竹炭を加えたもの
・発酵だし国産原料、無添加、活酵素にこだわった職人が作り上げた白糀。
凝りに凝ったスターターでちょっと蘊蓄が長いのだが体のことを考えて気持ちの入ったスープを有難く頂く。
・まるごとオニオンとローストビーフ
淡路島の玉ねぎを丸ごとオーブンで焼き上げて限りなく柔らかく甘く、ボリューミーな一品。
炉で焼くため火力が強いのか味のインパクトも強い。ローストビーフの分量もたっぷりあり食べ応えがある。
・焼き野菜のバーニャカウダー風
野菜欠乏症のになっていてどこにいても野菜メニューを探して頼んでいるがそんな人におすすめなのがこちら、これ一品頼んでおけばOK。取りにくい緑黄色野菜中心にがっつりと食べれれる。
野菜は肉厚で甘みがあり、食べ応えもある。
店内は何調というのだろうか。タイルをちりばめられたカラフルな色彩はちょっとエキゾティックで昔見たビザンチン帝国の絵画に似ているかもしれない。
