Food The original! Thick-sliced bonito seared with salt
The highlight of Sake Brewery Restaurants Takara is ``Ganso!'' Thick-sliced bonito tataki with salt. Freshness is the key to bonito. The fact that it is so popular is proof that we are able to provide fresh bonito every day. We use plenty of Kochi Prefecture's special straw salt from Shiojiro, and enjoy it with vinegar, garlic, wasabi, and salt. The best pairing for sake is Kochi's Tsukasa Botanfunenchu Yasaku.
Food Ryoma loved Shamo Sukinabe
We have recreated the gamecock suki-nabe, which is said to have been loved by Sakamoto Ryoma, a popular figure at the end of the Edo period. For the main dish, we use Satsuma Shamo chicken from Kagoshima Prefecture. The key is to enjoy the soft yet elastic meat, tofu, garlic leaves, and green onions in a sweet and spicy Sukiyaki. Please enjoy the gamecock suki-nabe, which has a connection to Ryoma, at the Tokyo International Forum, which is located on the site of the former Tosa domain mansion. The combination with Kochi's famous sake [Tsukasa Botan], which is said to have been loved by Ryoma Sakamoto during his lifetime, goes perfectly! !
