今年はとんと聞かなかった鳴物入り的フレンチな新規開店。
こちらも完全ノーマークだったのがひょんなことから伺うことに。
大手町駅直結なタワーの路面店。
道路側ガラスが大きすぎて少し違和感。
気持ちはわかるが客層的に大丈夫かな？
まだまだ「表からは中がうかがえない」っていうのが好きだもんな、日本人笑。
天井は高く、内装は思いの外カジュアル。
オープンキッチンだけど、キッチンに奥行きがあるので丸見えってわけではない。
ホールの女性がエレガントで素敵。
男性はまだ固さが取れてないような。
流暢にコンセプトの説明が始まる。
「循環」というベタなコンセプトを「根→葉→花→実」と分解すると広がるもんだね(*´ω｀*)
これは発明だわ。
さっそく沢山のお皿が並べられ、料理スタート。
各テーブルと並べたいお皿の総量が合ってないのね。
二人で座るとサーブの時にこちらでお水やカトラリーを移動してあげなきゃって気になってまう。エレガントでなくてここは残念。
お味やプレゼン、技巧については文句なし。
オープン仕立てで当たり前だけど、まだまだ引き出しにたっぷりアイデアが詰まってるんだろう。
その点、ヒーヒー言ってそうなのがダイニングにまで伝わる御殿山の三つ星とはエライ違い。
コンテンポラリーなんだけど、曖昧さを廃してエッジの効いた味わいを繰り出す。
「美味しくするのって簡単だけどむしろカッコ悪い」とか思ってそうなのがちらほらいる界隈だけど、ココんちのはちゃんと美味しい。
循環だけにサステナビリティな素材を活かして、ソースにも創意工夫が光る。

いいんだけどあえて言うと何かワクワクがもうひとつ足りないような。
すごくまじめな人達が、真面目に真剣に考えて作ったお店って感じ。
客の反応を見て、キッチンでニヤリってする、そんな悪い感じも少し欲しいかな。
レストランっていうものには、女性はあくまで美しく、漢はあくまでカッコよくあられるような場であってほしい。
たとえ三つ星だろうと、いや、三つ星だからこそ、そのあたりの日仏の文化成熟度の差に気付いてオペレーションやプレゼン変えたらすごくかっけーお店になるかもね。
今の感じだと客層が見えない。
今年のミシュラン間に合うといいね。
間に合わないと認知にもう一年。。
