Carefully selected ingredients such as red sea bream, white crab, presidential shiitake mushrooms, and young ayu are purchased daily with consideration to the season and timing. In order to bring out the charm of the most delicious food, the owner works closely with the ingredients to Creative Cuisine that are unique to that day. One day, I have clay pot rice with karasumi and mountain jellyfish, a small pot of beef tendon and Japanese pepper, and kakiage with red shrimp and fava beans. The owner's outstanding taste shines in the combination of fresh ingredients.
