一子相伝〈御鷹匠仕事〉 江戸時代に徳川将軍の御前にて玉ひで初代〝鐵右衞門〟に授かっていた、御鷹匠の包丁式に由来します。食鳥処理衛生管理法のもと丸鶏を一羽づつ外剥ぎ法により、店内の処理専用厨房にて切り分けております。唯一無二のクオリティーです。

[Shamo chicken hotpot] Shamo chicken hotpot, the prototype of Japanese "sukiyaki," uses "Tokyo Shamo chicken," which the seventh generation owner developed in collaboration with the Tokyo Metropolitan Government. Fresh Tokyo Shamo chicken delivered directly from a contracted farm is cooked in a sauce that brings out the flavor of the Edomae style, using the knife skills of a master falconer. Please enjoy the traditional flavor of our Shamo chicken hotpot. [Oyako-don (Chicken and egg bowl)] Inspired by the way eggs are bound in the sauce left over from Shamo chicken hotpot, the fifth generation owner's wife Tama invented Oyako-don (Chicken and egg bowl) around 1891.
