仙台への転勤が決まるだいぶ前、酒飲み友達とこちらへうかがう予定を立てていた。
どん詰まりではあったのだが、ジタバタしてもしょうがないという状況まで仕上げたから、予定はそのまま活かして突撃。
店の入り口の「熊出没注意」ステッカーからして中々クセ強め。中へ入ると山小屋みたいな内装で、小鹿の皮なんかも壁に貼られて、雰囲気もよく作っている。
この日は穴熊のコース。低温調理で火を通した穴熊のタタキに始まり、サラダ、鹿の炭火焼、穴熊のすき焼き、と、これでもかとジビエを堪能できる。すき焼きの味付けがやや甘めだったけれど、全部美味しくいただいた。ワインもジビエに合いやすいローヌなど、ちゃんとツボを押さえたセレクションになっていると思われる。
都心で食べられるジビエ料理としては、相当踏み込んだレアなやつがいただけるし、調理法もフレンチでもイタリアンでもなく、伝統的な日本食的仕立てだから、かなり面白い。
なお、食べ終えると、「熊食べました」というステッカーがもらえる。次、ここに来るアレンジを主導するのは現実的ではないけれど、ここは東京に居たら、また来たかったな。
