Grilled soft-shelled soft-shelled turtle is a common sight these days, but Suetomi is the original. He learned it from Masatake Fukumori, a ceramic artist and rare gourmet, and this led to his opening to cooking. The turtle is grilled raw over charcoal while being drenched in a sauce made from sake, soy sauce, and soft-shelled turtle soup, and Suetomi says, "The key to the flavor is to make the soup quite strong." It may not look very different, but with a little ingenuity, a unique flavor is created.

"Like this yurine bun, it may look plain, but I like traditional dishes that require a little extra work," says Suetomi. Yurine buns are made by wrapping slightly sweet seared duck meat in a dough made from carefully strained yurine root mixed with shiratama flour, steaming it, and topping it with silver bean paste. It is a traditional Japanese Cuisine that has been passed down since ancient times. The yurine root used is white silver from Hokkaido, which is characterized by its natural sweetness and delicate texture. The chewy yurine root is gently combined with the silver bean paste to create a somber and delicious taste.

The "Suetomi" sign is so unassuming that you won't notice it unless you're standing in front of the store. If you're not paying attention, you won't even realize it's a store - this modest appearance seems to reflect the feelings of Mr. Suetomi, who said, "I started this store as a way of giving back to the customers who helped me at my previous store." When you open the door, you'll be greeted by a painting by modern art master Lee Tohwan. In addition to the counter, there is also a relaxing private room in the back. The address is not disclosed and reservations are required.
