仕事終わりに利用しました。
恵比寿駅から歩いて5分ほどのところにある鮨屋さんです。
なかなか行きたいタイミングで予約が取れず、月日が過ぎてしまいましたが、ようやく予約を取ることができ利用できました。
店内はカウンター席のみ。
フルオープンで木目や大理石が美しい雰囲気。
照明の明るさも程良く、どこかホッとする雰囲気です。
握り手さんはこの日大将を含めて2名。
裏方さんも何名かいるようでした。
今回はおまかせフルコースを予約。
先付けや握り、鮮魚など海の幸を使用した一品料理など全23品の内容。
乾杯は生ビールで。
ヱビスの生ビールで、泡はクリーミー。
完飲が迫ると積極的にドリンクを聞きに来てくれるのも嬉しい。
今回提供されたのは手巻き寿司や大トロを含む各種マグロの握りや新いかやウニなど贅沢な握り。
太刀魚の塩焼きや鮑の茶碗蒸し風、鱧のしゃぶしゃぶなどの逸品。
それなりに期待して入店しましたが、その期待を大きく上回る内容でした。
早朝に仕入れた鮮魚をそのまま使用するというこだわりはもちろんのこと、各種鮮魚の説明がわかりやすく、5感ならぬ、知識も加え6感で楽しめるライブ感溢れるお寿司屋さんです。
わさびは静岡のわさびを目の前で擦った擦りたてのわさびで、ほんのり甘みがありツンとくる辛さはやや控えめ。
わさび多めでちょうどいいぐらいだと思います。
大将の包丁さばきは見事で、ついつい見入ってしまう程です。
何より人柄が良く、会話が楽しい気さくな方で常連さんらしき方に聞くと、『大将に会う為に来た』という方もいらっしゃいました。
握りのシャリも調整でき、今回は普通のサイズでいただきましたが、ふっくらとしたシャリでネタによってシャリの温度を変えているというこだわりっぷり。
ネタの品質を徹底的に研究されたようで、細部に至るまで美味しく食べてもらえるよう開発しているとのことです。
ネタも惜しみない大きさで食べ応えで、海鮮特有の臭みは一切なし。
ネタによってはカボスや柚子などと言ったフレッシュな香りと一緒にいただくものもあり、飽きることなく楽しむことができました。
諦めずに予約の問い合わせをし続けた甲斐がありました。
