恵比寿駅西口から5分ほどの場所にある「鮨染井」は大将のセンスもさることながら恐ろしくコスパが良く私も愛して止まない1軒ですが、この度以前の「鮨染井金平」から独立オープンされたと聞きさっそくお邪魔してきました。
先ずはエビス生（700円）で乾杯です。今回は大将の出身でもある福岡市場からも新鮮な魚介が多く入荷しているとの事でしたので、おすすめを伺いながらアラカルトでお願いしましたよ。
突出しは里芋田楽に春菊お浸し、牡蠣の有馬煮、八幡の赤こんにゃく、紅葉麩と何ともお酒の進むラインナップ！早々に日本酒に切り替えて。あてるのは日高見（1合/980円）
刺し盛りも蕩ける中トロに隠し包丁で花を咲かせた水蛸、炙ることで脂の甘み、香ばしさを添えたのど黒、ムラサキウニ、そしてサクサクと歯切れよく甘みの強い赤貝、口どけの良い甘海老とどの素材も丁寧な仕込みが施されているのが見てとれますね。
カリッと香ばしい炙り明太が良いつまみに。
そしてふわとろに焼かれたのど黒姿塩焼きに悶絶！あればラッキー？これぞ食べるべき逸品。添えられたクリームチーズにはいぶりがっこが練り込まれていて一瞬混乱するも、のど黒にクリームチーズといった未知との遭遇に思わず唸ります。高千代（1合/1000円）を！
自家製だという風味の良いカラスミにも惚れ惚れ。みずみずしい大根と合せて至福の味わい。そしてぎりぎり間に合った！セイコガニは冬の風物詩。最後は陸奥八仙（1合/980円）と甲羅酒にして余すことなくいただきました。
さらには和紙の折り鶴をあしらった美しすぎるサクとろ白子の天ぷらにひたすらうっとり。
割としっかりめに〆られた小肌は振り柚子で香りと共に楽しみます。のど黒をはじめイカや海老がゴロゴロと詰まった茶碗蒸しはまさに魚介の宝石箱！限りなく液状に近しいとろとろの茶碗蒸しが胃を優しく温めてくれますね。
レモンサワー（600円）で口内をリセットしたら小肌に続く握りのスタート。
サクッとした歯触りが小気味良いスミイカと平貝。海苔を巻くことでぐっと風味が増しますね。旨味が濃厚なボタン海老に中トロ、いくら。こぼれんばかりに盛られた雲丹に感涙！シャリとの比率が反則です。
ふんわりと優しい口当たりの穴子はツメと塩の2つの味で提供して下さいました。沖縄の雪塩が良いアシスト役。ほろりと口解けの良いシャリとの相性も抜群です。しじみの赤出汁は三つ葉が爽やかに香り余韻を残す1杯。
これだけ食べて飲んで1人15,000円ほどと相変わらずの素晴らしいコスパにただただ驚くばかり。大将との距離感も心地よくついつい飲み過ぎちゃうのが玉に瑕（笑）
