"Florilege" means "poetry collection" in French. Chef Kawate Hiroyasu seems to embody that meaning as he entertains his guests with each and every dish. The stage where he creates his spectacular dish

Chef Kawate's noteworthy features are his innovative approach to French cuisine and his commitment to the Japanese climate. Using domestic ingredients and focusing on the season, background, and culture, each dish is imbued with his strong desire to let guests relive "Japan" through food. The 11 dishes, which are marked by poetic keywords such as "encounter" and "projection," will satisfy not only the taste buds but also the intellectual curiosity of guests.
