We are also focusing on issues such as the food self-sufficiency rate, which has become a problem in recent years, and we are placing emphasis on using domestically produced ingredients and working to reduce food loss. The restaurant is a renovated old folk house, with an open kitchen counter that seats eight people on the first floor, and private rooms on the second floor. The exterior remains unchanged from its 70-year history, but when you open the door, you'll find yourself in a sophisticated, modern space.

The chef personally visits sake breweries and carefully selects sake that harmonizes with the taste of the ingredients. Every day, he pursues new pairings using his highly honed senses and taste. There are 30 kinds of sake on display at all times, and one way to enjoy it is to talk to the chef and enjoy the sake as if you were at a small restaurant.
