9品からなるおまかせを堪能。目で楽しむ和と素材を活かした舌で楽しむ和のどちら寄りかと言えば後者。枯山水のような心の静寂にベクトルが向いた目と舌で楽しむ調和があった。
お造りで頂いた海老が絶品の味と食べ心地でした。お食事で頂いた土鍋炊きのご飯の何とも言えない美味しさ。
ボトルで頂いたMontagny 1er Cruのキリッとしたミネラル感とも見事にマッチする洋の要素も、その味のどこかに感じられました。昨夜はオーナーの先崎さん1人がカウンター席に座られた2組4名とテーブル席の我々の食事の進み具合を見ながら適切なタイミングで仕上げられる見事な料理の数々を楽しむことができました。フレンチ、イタリアン、スパニッシュは、それぞれの国でミシュラン2星店にはお邪魔しておりますが、実はここ日本で和食の2星を楽しんだのは、壽修が初めて。流石だなあと納得でした。
