We make minced meat cutlet using the scraps of loin and fillet that are generated during the preparation process. Additionally, by using round-ground bread crumbs that also make use of bread ears, we are contributing to reducing waste from the ears that occur during the bread crumb production process.

The rice used is "Tsuyahime" from Yamagata Prefecture, which is known for its good grain quality and sweetness. Salt is used depending on the quality of the meat, and for loin-type meat, we use Kuroshio Genryu Salt, which is made by boiling seawater in a flat pot. For the fin meat, we use Mongolian rock salt jamtudaus. In addition, lard and white soybean oil are used to achieve both a fragrant aroma and a moderate lightness. The fresh cabbage is cut as thinly as possible to make it Pork Cutlet.
