ChefShingo Takahashi: Pursuing sushi that guests can "enjoy"
Born in Ibaraki Prefecture in 1978, Shingo began his career in sushi at the urging of his uncle, a sushi chef, after dropping out of high school. He spent 18 years training at the famous Sushi Takumi restaurant in Yotsuya, led by sushi master Nakazawa. From the age of 29, he left sushi for three years to work as a fisherman in the Goto Islands and make sake at a sake brewery in Miyagi. In May 2013, he was ready to open Takumi Shingo in Minami Aoyama. While maintaining the Sushi Takumi style, he continues to gain fans with his warm personality and solid skills.
Food selection course featuring alternating exquisite nigiri sushi and side dishes
The omakase selection follows the style of Sushi Takumi, where sushi and side dishes are served at just the right intervals to suit the guest. The rice is a blend of koshihikari and sasanishiki rice, and red vinegar or rice vinegar is used depending on the topping. The chef, a former fisherman in the Goto Islands, has a keen eye for ingredients, and the sushi is aged and seasoned to bring out the best in the ingredients, resulting in a memorable flavor. There are about 15 types of sake on offer at all times, with a focus on crisp pure rice sake.
SpaceA simple and comfortable space where you can relax
Located close to Aoyama-itchome station. Although it is a famous Edomae sushi restaurant that continues the lineage of master chef Nakazawa, it has a homey atmosphere where you can enjoy sushi and snacks. In order not to overwhelm guests, the interior decorations are limited to Karatsu ware pottery and flower arrangements. It is a small restaurant with only eight counter seats, but each seat is spacious, so you can relax. Chef Takahashi's hospitality and thoughtfulness are also one of the attractions.
The nigiri and side dishes are woven together at a good tempo, giving you a taste that is both fast and slow. Orthodox Edomae sushi that follows in the footsteps of Sushi Takumi.
