外苑前駅1番出口から徒歩4分、外苑西通り沿いに在りながら、しっぽりとした大人の雰囲気漂う隠れ家ビストロ「Les Cocottes（レ・ココット）」にお邪魔してきました。
こちらは首から上を一発で仕留めたヘッドショットの個体のみを死後硬直が始まる前に処理した鮮度の良い最高品質のジビエと、唎酒師資格も持つソムリエの厳選ワインが人気のお店。
知っていますか？鹿や猪は害獣なんだそうです。害獣として捕らなければならない命があるならばどうか良い方向へといった流れを作りたい、そんな想いからジビエを扱っているそう。素敵ですよね。
さて、先ずは旬の食材やジビエ、魚介、産直野菜などを少しずつ楽しめるという前菜盛り合わせ（1人前/1400円）にハートランド（750円）をチョイスです。
前菜はスペイン産生ハムから時計回りに鹿肉とフォアグラを使ったパテカン、白子と里芋のクリーム煮込み、ビーツのムース、燻製のブッラータチーズ、わらさのカルパッチョ、フリッタータ、根セロリマリネ、キャロットラペ。まるで宝箱をひっくり返したような盛り合わせ！もう、ひと口いただいただけで美味しいお店であることがわかります。
シェフが作った特製レモンサワー（850円）はシェリーで漬けたレモンをトニックウォーターで割ったもの。甘いお酒があまり得意ではないのでトニックウォーターの代わりにソーダで割ってもらいました。そんなフレキシブルな対応も嬉しい。
オープン当初から不動の人気だというウニのトマトクリームパスタ（1680円）は超濃厚ソースともちもちの生パスタが絶品！こちらにはクレモンティーヌ・ロゼ（フランス/1000円）を合わせます。
ジビエはウリ坊やヒグマもありましたが、やはりここは看板メニューの熟成蝦夷鹿ロースト（100g/2400円）を！北海道北見の本格熟成エゾシカ肉専門店「poro wacca （ポロワッカ）」のものだそう。
鹿の脂、さつまいも、紫キャベツのマリネ、山山葵、フルール・ド・セルを添えて。
こちらはゲランドかな。たっぷりの山山葵と共に肉の旨味を引き立てますね。しっとりとした柔らかいシルキーな肉質、確かにこれは旨味の塊！ジビエがあまり得意ではなかったのですが完全に覆されました。
ヘルシーで美容にもいいですしね。ジビエを食べたくなったらまたお邪魔したいと思います。
