Born in Tochigi Prefecture in 1976. Moved to Tokyo at the age of 19. In addition to traditional cooking techniques, he has learned blowfish, tea kaiseki, and sommelier skills at various training locations. After working as a head chef at a long-established Japanese Cuisine, he opened ``Akasaka Tsurugimochi'' in 2023 and became independent. Utilizing our past experience, we are particular about purchasing directly from producers all over the country. We bring out the best in seasonal ingredients by adjusting temperature, texture, and pasteurization to create a rich, rich flavor that you will never get tired of. I look forward to a masterpiece made with all my heart.
