レバーが逸品のお店とのことで連れてきていただきました。ダイナミックなカウンターと、店の奥にズラりならぶワインたちがスタイリッシュな店内。
遠藤利三郎氏のセレクトするワインと共に愉しむは、
シャレたフレンチテイストなつまみがモダン。
スープでお腹を温めつつ、
小皿の大根下ろしは、載せられた梅がフルーティー。
アペタイザーでいただいたシーザーサラダは、トマトの糖度の高さやクルトンが小さめで繊細なところから違いを感じる。
おまかせは、せせり、ぼんじりと続き、プリっとした肉質を感じられる火入れ。焼きアスパラの素材の旨みが中から溢れ出す甘さや、椎茸の大きさにも素材美を感じました。
白レバーには、ピンクペッパーとホワイトペッパーが施され、カリフォルニアのトロピカルフルーツと樽のニュアンスのシャルドネとよく合う。
ワインは、イスラエルのヤルデンや、
赤レバーの串に合うものとリクエストすると、マーガレットリヴァーのエレガントなピノノワールをご提案いただき、こちらも綺麗なマリアージュでした。
