makuakeのチケットにて訪問。日本酒ペアリングコースでお願いしました。
通常寿司屋のコースといえば肴がいくつかあってからの握りというのが定番なのに、ここはスタートから握りと肴が同時スタート。
ペアリングは肴に合わせるとのことで、最初は別注でビールをお願いし、そこから様々なお酒を出していただく。
肴で印象に残ったのはあん肝と奈良漬け。いずれも味の濃ゆい肴なので、必然的にお酒が進みます。他にはアジフライと、寿司屋には珍しく揚げ物でしかもタルタルソース。かなりあっさりした味わいなので、寿司の味にも響かず嬉しいサプライズです。
はまぐりの酒蒸しは少し味が尖り気味なので、ほんの少しだけ味醂入れてもいいのかなとか。
カニは味噌と合わせてほぐしてあり、泣きそうにうまい。
握りは中トロから始まり、赤身にヒラメ、コハダにイカなど、どれも程よく乳化が進んでおりまろやかな味わい。
石垣貝というネタは目の前で板さんが叩くと反り返って動くほどの新鮮さで、これまた日本酒がよく合いました。
ペアリング、料理のボリュームともに満足で、お腹も心も満たされ終了。
店内はカウンターのみで、ほどほどの高級感で敷居も過度に高くなさそう。板さんは寡黙でそれが居心地も良く、また訪れたくなる良店でした。
