ChefIrugo is a chef who trained in Japan and New York.
General Irugo (Real name: Yosuke Oguri) Born in Sakura City, Chiba Prefecture. After graduating from culinary school, he worked at a famous Conveyor belt sushi restaurant in the prefecture and a high-end sushi restaurant in Tokyo before coming to the United States. After working at a Michelin-starred sushi restaurant in New York for four years, he opened "SushiBarMugen" in Ebisu in January 2021, with the concept of "sushi x music." In April of the following year, we moved to Roppongi, where we remain today. Influenced by Mexican culture, they wear the formal attire "Guajavera" worn during ceremonial occasions in Caribbean countries.

The ingredients are prepared with a special knife made from steel, which is the closest material to a Japanese sword, and the feature is that the cells do not break down and there is no fishy odor. We mix playlists every day, taking into consideration various aspects such as the weather, purchasing status, menu structure, customer tastes, etc., with carefully selected sounds such as Nujabes, which is beloved by the chef. We select not only JAZZ and HIPHOP, but also sounds suitable for serving that day from a wide range of genres. The QR code for the day's playlist is attached to the paper on the counter, so please read it and enjoy it on your way home.

The exterior looks like a stylish cafe bar. Mugen's entrance is located in a corner of the store that you won't notice at first glance. Mugen's private room opens when you open the door. It's truly a hideaway-like space. Enjoy authentic Edomae sushi in a mellow atmosphere that is not typical of a Sushi, accompanied by music selected by the owner. It can also be reserved for private parties for 6 to 8 people, so please use it for small gatherings such as celebrations and family parties.
