東京の飲食店で、予約が半年以上取れない店の数は50では利かないだろう。それくらい美味しい店が揃っているといえるが、その多くが席数が少ないところばかり。特に高級日本料理では10席以下。 「そこに予約を持っている」という優越感、希少性はあるものの、せっかく大切な方をお連れしたいと思っても、数か月先の予約なら、少なくてもビジネス接待には向かない。 ならば、大箱でそのクオリティを兼ねそろえる店を作ったらどうだろうーーこの難題に挑んでいるのが麻布十番の日本料理「麻布」だ。ワンフロア１２５坪で３階層あるから、全部で４００坪弱。カウンターと個室が揃っているので、仮に満席になっても数か月待つことはない。 肝心な料理は、飯倉キャンティスタイルのワゴン形式で料理を注文するシステム。 つまり、その日の最高級の食材を見せ、それぞれに合った料理方法を提案。前菜、主菜、それぞれ１０種類ほどから選ぶという方法だ。いまの日本料理のほとんどは店のお任せコースだが、これなら自分の好きな料理が選べ、しかも選択肢は多くないので迷う必要もない。
