With their signature dish, minestrone, and other products, they are working to upcycle ingredients that would otherwise go to waste, and all of their food waste can be returned to their own fields.
We actively purchase and use substandard vegetables from farmers in the vicinity of our own fields. Curry made with residue from the fields is also available as a take-out menu.
We can also propose menus that do not use animal products at all, based on vegetables grown in our own fields, according to customer requests.
Providing vegetables from our own farm to fellow chefs when they run children's Cafeterias
90% of the ingredients are sourced from Tokyo, contributing to a reduction in food mileage, and the farm uses residue from Restaurants and compost purchased from a nearby dairy farm.
