ChefMinoru Hasegawa - A gifted man whose talent blossomed from countless hardships
Born in Hokkaido in 1977. While working in a factory making electrical switchboards, he ate Italian Cuisine food in Sapporo and became interested in working in the food and beverage industry. He started working in the industry through a connection. He saved up some money in Tokyo and returned to Hokkaido to open a cafe with an old friend in Chitose City. He then opened his own Restaurants, Ristorante Kaoru, in Ebetsu City in 2010. He made a name for himself with his dishes. In April 2018, he opened his own restaurant, Ristorante Kaoru, in Tokyo.

The restaurant has a unique exterior that resembles a private house with an impressive nameplate. The first floor has a private room for four people with a chef's table where you can enjoy your meal while looking into the glass-walled kitchen, and the second floor has a counter that seats four people. The smartphone stands placed on each table are there to ensure that diners can eat their dishes as quickly as possible, as they are at their most delicious when piping hot. In this neat space where you can appreciate the attentive care, you can fully concentrate on the dish in front of you.

Chef Hasegawa pays close attention to managing and cooking the ingredients in order to serve the best ingredients, which he procures directly from the source, in the best possible condition. He learned his cooking techniques by researching the internet and sifting through academic literature. Every dish he arrives at after much trial and error has a vivid flavor that is burned into his memory. The menu, which uses alfonsino, procured from fish concierge Hasegawa Daiki, whom Hasegawa describes as a genius, is an essential dish for getting to know this restaurant.

...o everyone who visited us. Starting in April, Hasegawa Minoru will be open two days a week, and on the five days a week, sous chef Tsuguhiro Tetsuji will be taking over Hasegawa's original cuisine, renovating the restaurant as "Kaoru HIROO". We appreciate your continued patronage.
