The chef at our restaurant is Ugo Perret-Garricx, who has experience working at Kikunoi in Kyoto and Esquisse in Ginza. Enjoy a fusion of Japanese-style meal and French cuisine cuisine, expressed through the techniques he has cultivated at famous restaurants. The chef goes to Toyosu Market every morning to carefully select the best seafood of the day with a keen eye. He also uses fresh vegetables delivered directly from Noto and Chiba, bringing out the best flavors of the ingredients to create the most exquisite dishes. Enjoy a special dining experience in an intimate and luxurious atmosphere.

Our chef is Hugo Perret-Garricxe, originally from France. After coming to Japan, he spent two years training at the three-star Japanese Cuisine restaurant "Kikunoi Honten" in Kyoto, and then spent seven years as a chef at the two-star French cuisine Restaurants "Esquisse" in Ginza. He is a highly skilled chef who makes use of the extensive experience he has gained working at renowned Japanese-style meal and French cuisine restaurants to create delicate and original Creative Cuisine. Enjoy a gourmet journey that can only be experienced at our restaurant, using ingredients from the seas and mountains of Japan.
