鳩肉料理専門店。
日本で唯一の鳩農園の直営飲食店。
当然のことながら市場を介さないので、安いうえに状態が良い。
さらに内臓などの希少部位も余すことなく料理に使われるし、
料理によって使うサイズを変えたり調理法を変えたりするなど、自由度全開。
日本で美味しい鳩肉をリーズナブルなお値段で美味しくいただこうと思うと、
このお店一択なのではないかと思う。
調理と味付けは比較的シンプル。
エスニック的な方向の味付けも割と分かりやすい方向。
でも、素材が力強いので、どんな味にしても鳩の旨さが素晴らしく際立つ。
また、他店では時折り遭遇する鳩特有の臭みも、こちらのお店では皆無。
美味しい鳩の旨みを存分に楽しめる。
