MAZ is a Restaurants created by the chefs of Peru's Restaurants Central, which won first place in The World 50 Best Restaurants. Awarded 2 stars in the "Michelin Guide Tokyo 2024"☆☆ The concept was "to propose a new gastronomy experience based on cultural and ecological knowledge of Peruvian landscapes and ingredients," and a unique world view was spreading. The ingredients are all things that I have never encountered before! The presentation and expression are very original, and it is a series of surprises! The colors are vibrant and each dish is unique. Not only the food, but also the plates and cutlery had an impact. I was especially surprised by the spoon rest of the dried octopus! The menu list that expresses each dish is also wonderful, and I want to put it in the picture frame as it is. Each dish expresses the bottom of Peru and the high mountains, and has a wide variety of flavors, from the aroma of the sea to the root vegetables of the Andes Mountains. The taste of each ingredient was strong, and I was particularly impressed by the lily root. I had never seen such a sweet lily root. I was happy to see that there were many dishes of pumpkin and sweet potatoes, which I love! The pairing is mainly South American liquor, but rather the world of food and art than Restaurants. Great!! That's all there is to it. Really.
