2024年3月 神楽坂にNew Openした【神楽坂 鰻蕚】でランチ。店内はアーティストの作品や盆栽などもあり日本の伝統的な技巧とモダンな要素を組み合わせた作りでスタイリッシュで好み。箸も"The お江戸Tokyo"な感じでインパクトがありcute。
鰻は国産で備長炭が使われ"皮はパリッと身はふっくら"に焼き上げてあり斬新なラインナップが感動レベル。鰻の概念が変わった。。。鰻さん、今まで可能性をわかっていなくてごめんなさい笑
米は岐阜県飛騨地方のブランド米「龍の瞳」を南部鉄釜で炊き上げていて粒が大きく甘みと華やかな香りが素晴らしく驚愕。お米がこんなにおいしいと思ったの初めてかも！
ペアリングは、アルコールのみならずノンアルコールのラインナップも考え抜かれた構成で見たことがないものが並んでいて見ていてワクワクしました。
総じて結論、固定観念にとらわれない鰻の"新しい食べ方"を体験出来、貴重な経験となり。ホスピタリティやエンタメ性も抜群で間違いなく人気店になる予感がしました♪
