Hanabusa's carefully selected large eel is grilled over Bincho charcoal for a long time until the skin is crispy and the meat is soft. The homemade sauce brings out the flavor of the eel and reduces the sweetness. Please enjoy the carefully grilled eel that goes well with the selected rice.
Food Uses “Ryu no Hitomi” from Gifu Prefecture! Commitment to rice
We use ``Dragon's Eye'' harvested in the Hida region of Gifu Prefecture (northern Gifu Prefecture), which is the birthplace of Dragon's Eye. A rare rice that is 1.5 times larger than Koshihikari, one of the largest in Japan, has a lasting sweetness, a gorgeous aroma, a balance of softness and chewiness that Japanese people love, and pursues the original deliciousness of rice. The rice is carefully made by farmers and carefully cooked in a Nanbu iron pot. We will serve freshly cooked rice in an iron pot to each guest.
