兼光の新仔鰻 海外から一時帰国の友人を案内してお再び邪魔しました。季節的に若しかしたら…と思いながらあ邪魔しましたが、ありました新仔です。何とも脂が美しい味なのです。友達には欲張って共水も同時に味わってもらいました。感動してくれて、アメリカでもあの味を思い出すとお礼のメッセージいただきました。ありがとうございました。
蒸し、江戸前のひとつの極みかな
予約なしで伺ったのにもかかわらず、店外で雨の中待っていただいてるお店の方(いかにも、美味しいものが大好きですと言う笑顔のお兄さん)が、丁寧にお店の解説をしてくださいました。『初めてなんですけど…』。今日の供水、和匠、兼光の様子もお聞かせいただき、相談の上、供水と和匠の相盛りを引き受けてくださいました(2人でしたので、1人ではこの我儘は無理かな)。様々なうなぎの話が楽しく、またお向かいの鬼子母神もお参りして、あっという間の40分、店内に案内いただきました。鰻巻き、珍味三種(一夜干し、肝のみぞれ煮、西京焼き)、日本酒もうなぎとの相性で厳選銘柄多数。純米の黒牛で静かに待ちました。関東の背開きなら、普通は内臓のあったお腹は凹んでますよね。串の打ち方?全体が凸面でキラキラに焼き上がっています。タレの甘さが5段階の2。まずこれが私にはありがたい。蒸しの工程では、これがひとつ関東風の極みかな。本当に美味しいです。“ふわふわ”でなくて、“ふわっふわっ”。なのに香ばしくもある。食べ比べは初体験、うなぎの種類でこんなに違うんだと、驚きでした。甲乙つけ難く。供水の方が脂も少ないのに味しっかり。また鼻に抜ける香りが、なんとも良いのです。和匠もあっさりと、本当に幸せな気持ちになります。下谷七福神巡りでは、鬼子母神は福禄寿の場所。お寺よりお店の前の笑顔の福禄寿に、まずはなんなり相談してみましょう。きっと最高に美味しい出会いがありますよ。次回は平日に塩焼きの櫃まぶし、頂に上がります。本当にご馳走様でました。

これで3回目でしょうか。前回?前々回?に次回以降のお楽しみとしてご案内頂きました塩の櫃まぶしを頂きました。これも美味しいですね。塩悪くないですね。地焼きの香ばしさ、芳ばしさがたまりませんね。数週間前の予約でお邪魔しました。入り口直ぐのテーブルで少し忙しない感じでした。12:30よ予約でしたが、共水鰻は既に売り切れでした。一緒のメンバーは和匠、兼光、更に特大で蒲焼、白焼など頼んで皆んなで少しづつの食べ比べ。見事に其々の好みはバラけて、それもまた楽しいですね。安定の美味しさ、ご馳走様でした。
