The seafood used for sashimi and other dishes is purchased from a fish store that has been doing business with the owner since his grandfather's generation. Bluefin tuna comes from Ireland, which is known for its delicious fat and firmness, and depending on the season, horse mackerel, amberjack, hairtail, sea bass, and sea bream are also available. One of the highlights is the red-spotted pufferfish, which is served in an extremely fresh ikejime style. Please enjoy the hidden ingredients that are loved by market people, such as the crunchy grilled frosting on the surface and thickly sliced meat, and the piping hot fried chicken.

Kuroge Wagyu beef is selected from A5 and A4 ranks of Yamagata beef and Miyazaki beef based on quality. We recommend the roast beef, which is cooked at a low temperature under vacuum. By heating it at about 60 degrees for 1 hour, it becomes moist and soft in texture while being cooked through. The cross section is a beautiful rosé color, and you can roast Iberian pork and duck by changing the temperature. Enjoy with the special ponzu sauce made using Shodoshima soy sauce passed down from the owner's grandfather. Micro-vegetables such as sprouts on the plate are also a nice addition.

For wine, Enoteca selects brands that go well with sashimi, Japanese-style meal, and meat. Particularly interesting is the varietal where you can taste and compare six different types of grapes, and the owner's favorite is the combination of roasted duck with a strong soy sauce flavor and Syrah that reminds you of dark cherries. The only sake available is Kamotsuru and Shirataka. The former has a taste that gently wraps around the tongue, while the latter is powerful and yet plays a supporting role, which is its charm. There are also private brands that are difficult to obtain.

We are also particular about soft drinks so that even children and people who do not drink alcohol can have a pleasant time. For example, craft sodas from Kochi Prefecture include Tosa Bergamot and Konatsu (Hyuganatsu) Cinnamon Ginger Ale. We also have juices made with Fuji apples from Shinshu, Mikkabi mandarin oranges from Shizuoka, and grated La France from Yamagata. Mixed juices made with straight fruit and vegetable ingredients are smoothie-like and packed with vitamins.
