Late February 2024 I took a quick trip to the Kiba branch of Sugitama, a sushiro-style Izakaya (Japanese-style bar) that I was interested in. The location is on the 1st floor of a building about 3 minutes walk from Exit 1 of the Tozai Subway Line. The restaurant has about 50 seats at the counter and tables. I was shown to a table at the back of the store. First, let's toast with beer and highballs. I ordered tuna medium fatty tuna, shime mackerel, mizuna and onisura salad from the reservation service. Shime mackerel is delicious with plenty of seasonings. Switching to sake, we proceeded with Tempura, Chinese dumpling, melted rolls, nigiri of butter-grilled sea urchin, fried eggplant with mayonnaise, green onion tuna and olive oil baguette. Tempura is crispy and recommended. Chinese dumpling is a unique type of shumai that is elongated and topped with seafood such as squid, shrimp, and eel. It also feels a little forced to be combined with seafood. The scrolls and nigiri are consistent and delicious, as you would expect from the Sushiro series. The sushi rice is red but not very sour. To finish off my meal, I ordered the title Ramen. By the way, this is the only Ramen menu. Soon after, a bowl that was about two times smaller than a regular bowl appeared. The soup is slightly cloudy with clear water and salt. It tastes like light soup. The soup stock, which seems to have been made from the bottom of the sea bream, is elegant without being unpleasant. The broth oozes out from the large amount of clams, making it a very delicious soup. The noodles are medium thick and straight with a high amount of water. Whole wheat bran can be seen on the noodle skin. It has a chewy texture that goes well with the soup, making it one step further in compatibility. I thought it would be better to use medium-thin noodles that are a little more supple. The amount of noodles is probably over 100g. Ingredients are clams, seaweed, and green onions. I counted 10 clams. It's fluffy and just the right amount of boiling, making it delicious. The bill is about 3,700 yen/person, which is reasonable. The 2-hour all-you-can-drink course for 3,500 yen at the table next to me looked pretty good, so I'd like to try it if I have a chance.
