⚪︎アニョロッティダルプリン
ピエモンテの伝統的な詰め物パスタ。中には魚介とアサリの詰め物が。アサリの出汁、玉ねぎ、バターサフラン。中の具材たっぷり。スープも旨みたっぷりで美味しい。

⚪︎根室ウニ
全粒粉のブルスケッタにウニ。間にはペペロンチーノペーストでガーリックトースト風な味に。
⚪︎カッペリーニ
つけ麺で頂きます。つけ汁はガスパチョにバーニャカウダソースを混ぜたもの。カッペリーニにはイタリアンパセリを散らして。夏野菜の力強い濃厚な味にツルリとしたカッペリーニがめちゃ合う。つけ麺で頂くのが面白い。
⚪︎太刀魚のムニエル
ローリエとタイム。ローリエはバーナーで燃やして。枝豆のカルボナーラソース。太刀魚はふっくらフワフワ。クリーミーなソースとピッタリ。

フリットには竹すみを練り込んで。竹串に刺して。肉肉しくジューシー。フェンネルシード入り。
⚪︎赤海老の握り
シェリービネガーの酢飯で。自家製のトマト醤油を塗ってオリーブオイルを少し。海老の甘さにトマト醤油が合う。

定番のバターソースで。タヤリンは少し太めです。パルミジャーノ24ヶ月とトスカーナ州の黒トリュフを削って。フォワフォワのパルミジャーノと黒トリュフがタヤリンによく絡んでバターソースとの相性抜群。

スイカを凍らせたあとにシャーベットに。レモンを絞って酸味をプラス。
⚪︎牛肉
岩手の漢方牛。マルサラソテー。夏野菜のきんぴら添え。漢方牛はあっさりしていてジューシー。旨みもしっかりありますが後味はさっぱり。

イタリアンパセリを散らして。ボンゴレビアンコのご飯。
⚪︎ティラミス
青肉メロン、紅茶の茶葉、マスカルポーネムース、ブルーキュラソーのジュレ、レモン。
伝統的なイタリア料理に捻りを効かせていて和の食材を組み合わせたりと枠に囚われないコースで面白かったです。お料理も手抜きなしで更にパフォーマンスありの劇場型レストランでもあります。楽しいお店です。
