こちらでは 技術の差が出るアバ料理にスポットを当て

前菜盛り合わせに登場する『アバジュレ』は
豚耳、トリッパ、ギアラ、アキレス腱、牛タン、
豚の直腸などを 別々に火入した後 コンソメと煮込み
