Pursuing the taste of the pizza dough itself, we are now blending flour from three different grinding methods into one pizza dough, including naturally grown wheat and domestic wheat, to create pizzas that we can be confident are delicious. Please give it a try.

When I visited Emilia-Romagna, I encountered Prosciutto and tortafretta (gnocco fritto). I was so impressed by the deliciousness that I bought many local cookbooks, made a prototype, and finally asked a local chef for the recipe and recreated it exactly as it was there. .
