ChefMotoyuki Iwasawa - Refined sushi that exudes elegance and sophistication
Born in Kanagawa Prefecture in 1975. After graduating from university, he worked as a systems engineer, but he could not forget the fun he had working part-time at a sushi restaurant during his student days, so he decided to become a chef. After about a year and a half of working as an office worker, he put an end to his life and entered the world of sushi restaurants. After 15 years of training at Sushi Takumi Saito in Akasaka Mitsuke and other restaurants, he opened Fudomae Sushi Iwasawa in 2016. Having studied abroad in China during his university days, he is able to provide global support in English and Chinese.

Chef Iwasawa, who was second in command at Sushi Sho Saito in Akasaka Mitsuke, continues the same style and serves an selection course that alternates between nigiri and side dishes. Three types of vinegared rice are used skillfully to match the characteristics of the fish, and you can enjoy each piece of sushi made with solid technique and carefully prepared masterpieces. The fish used is the highest quality fish selected by an experienced connoisseur that day, and all the vinegared rice is made from a blend of two or more types of vinegar, so you can feel the attention to detail.

You'll be greeted by a carefully polished plain wood counter. The interior was designed by a customer from the "Sushi Sho Saito" days, and Mr. Iwasawa's aesthetic sense can be felt in the wallpaper, which is partly made of washi paper, and the elegant design that makes use of soft curves. The space is filled with Mr. Iwasawa's desire for customers to "enjoy the conversation and the atmosphere," and is also attractive for its relaxed and comfortable atmosphere. You'll want to enjoy your time savoring the exquisite sushi and side dishes while enjoying a conversation with the friendly and gentle Mr. Iwasawa.

Located in a residential area away from the hustle and bustle of the station, Fudomae Sushi Iwasawa has a subtle yet strong presence. At the beautifully polished plain wood counter, an omakase course
