We have a direct contract with a fresh fish store in Uwajima, Ehime Prefecture, the owner's hometown. Fresh fish delivered directly from the fishing port! That's why not only sashimi but also fish dishes taste different. We want our customers to say ``delicious'' from the bottom of their hearts. With that in mind, Gaiya is particular about handmade and seasonal ingredients. We prepare, cook, and serve our food by ourselves every day, making the most of the best ingredients. Especially when it comes to fish, we use fresh fish delivered directly from Uwajima, Ehime, quickly cooked and served as sashimi, Simmered dish dishes, grilled dishes, and other specialty dishes. .
Food Sea bream rice
Ehime Prefecture has the highest production of farmed red sea bream in Japan! Approximately 60% of this (as of 2005) is produced in Uwajima. Taimeshi Fresh sea bream meat is grated into three pieces, mixed with a sauce made with soy sauce, mirin, egg, sesame, and dashi stock, and eaten with the sauce over hot rice.
