He entered the culinary world in 1969. After graduating from culinary school, he trained at a number of Western Cuisine restaurants in Kobe, Osaka, and other locations. He was mainly in charge of making sauces and was also in charge of product development at Shiseido Parlour, a long-established Western Cuisine and Western confectionery store in Ginza with over 100 years of history. In 1982, he opened "Tomato" in his hometown of Ogikubo. He has continued to protect the taste of "Tomato" while evolving slightly to suit the changing seasons and times.

The interior of the restaurant is comfortable with subdued lighting, and time flows peacefully. The antique furniture inherited from Restaurants that used to operate in the same location creates a nostalgic atmosphere. The chairs are made by Akita Mokko, the only specialized workshop in Japan that continues to make bentwood furniture with a history of over 100 years, and have been used with care, undergoing repeated maintenance. The secret to the deliciousness of this European-style curry, which is carefully prepared by simmering 36 kinds of spices, ginger from Kochi Prefecture, garlic from Aomori Prefecture, and beef stock for about 140 hours, is not just the spices. Another part is the secret sauce that has been carefully made by adding to it since the restaurant was founded in 1982. The diverse spices and a drop that has been accumulated over the years blend together to create a deep flavor that overlaps many times...the lingering umami flavor will leave everyone excited.
