The origin of Toyama Ramen. Founded in 1931, this hand-made ramen has been around for 83 years, starting from a food stall under the willow tree.
The first couple (now the third generation) opened the restaurant in 1931 as a food stall, and it is affectionately known by long-time customers as "Yanagi no Shita." From the time it first opened unt
...il now, it has not been swayed by trends, and has stubbornly maintained its style of genuine handmade noodles, kneaded and stretched by hand, and a light soup made from chicken bones and dried sardines. I think this is the reason why it has been supported by so many customers for so many years. The noodles are made every morning according to the conditions of the day, with the flour, salt, kansui (water salt), and water temperature adjusted to achieve the smooth, chewy, and springy texture that only handmade noodles can have. The soup is made with the finest dried sardines and fresh chicken bones, and the stock is carefully prepared every day with the motto "Freshness is the most important thing when it comes to soup." The restaurant is spacious and has a raised seating area, so even large families can dine here with peace of mind. It is crowded with customers of all ages every day. Wontonmen, with its unique texture of handmade noodles, is the most popular dish.
