山梨県韮崎にあるフレンチレストラン「TSUSHIMI」。食べログ百名店2023。神泉から移転。韮崎駅からタクシーにて15分程度の山中にある。電気は通っていたが、水道の整備には役場とかなり交渉したらしい。1日1組。15時スタートに合わせ、仕込みを午前3時から始めるという、説明を聞いているだけでため息の出る手の込んだ料理の数々は、フルコースで４時間半の長丁場に及ぶ。料理はどれも素晴らしい。一皿に野菜が80～90種、計8パターンの調理方法で盛りつけられる「NOEN 2」は、神泉の頃の「NOEN」からさらにパワーアップしている。店の裏手に畑を作り、素材は山中からも。究極の地産地消料理を堪能できる。
