フードマイレージやフードロスという言葉のなかった時代から、食材はできるだけ近隣の生産者のものを使用し、端材も料理に上手に活用してきました。それでもロスになってしまうものは堆肥として畑にまき、そこからまた新たに種が芽吹いています。森の中に身を置くことで自然の循環を強く感じています。

The course starts at 3pm and serves about 20 small dishes, lasting about five hours with intervals in between. However, as the main course is vegetables, the after-meal feeling is surprisingly refreshing.
