They explore the sea and mountains of Aichi to find ingredients, and work in the fields themselves. We offer farm-to-table omakase course meals made with locally grown ingredients both day and night. |
Carbonize vegetable scraps and knead them into grissini or process them into powder and use them to accent dishes. Wildflowers that grow naturally in the field are used seasonally. We will face up to ``food that ends up being thrown away'' and provide it in a creative way.
By collaborating with local producers, focusing on local ingredients, and aiming to offer deliciousness unique to the region, we would like to continue to help improve the brand power, recognition, and production volume of Aichi Prefecture's ingredients. In addition, we are a member of the Ai Farm Project and actively use vegetables produced by people with disabilities.

We worked in the fields ourselves, visited fields, seas, mountains, ranches, and sake breweries, and explored local ingredients with producers in Aichi Prefecture. Starting with freshly made homemade
...cheese made from milk from Aichi Farm. Fruits and vegetables from within the prefecture, seafood from Ise Bay and Mikawa Bay, Hibiki Chita beef, Aichi duck from Mikawa, deer from Toyota, freshly made Gelato made with local sake and sake lees.Modern Italian cuisine with a local feel.
