Food [First in Nagoya] Basque cuisine x Tokai region modern Basque gastronomy
The Tokai region, similar to the Basque region, is surrounded by the sea and mountains, and is a blessed terroir with a rich variety of seasonal ingredients. We use the famous clams, Mahata from Owase fishing port, Matsusaka beef, and other rich ingredients to create traditional and modern dishes using pinchos and wood-fired cooking methods.

ChefShunsuke Yamakado ■ Studied at several stores in Kansai and France
Born in 1983, started his Restaurants career at the age of 19. After training at a famous restaurant in Osaka, Vredovre, he became the sous chef at the age of 24. Afterwards, he went to France and trained at several Restaurants restaurants in Lyon and Paris before returning to Japan. From the age of 30, he served as the chef at sister restaurant The Opera for about 10 years, and then became the executive chef of MAISON8.
DrinkAt "Escancia," where Basque-style Txakoli is poured from a high place
Txakoli is a standard wine when bar hopping in San Sebastian. It is served in a special glass, just like the local one, using a technique called escancia, where it is poured from a high place. Enjoy the local atmosphere with our specialty eight kinds of pintxos, Txakoli prepared right in front of you, and the sound of waves in the background.
