...ue cooking methods. The Tokai region, like the Basque region, is surrounded by sea and mountains and is blessed with a rich terroir that is rich in ingredients throughout the seasons. Using these rich ingredients, we will prepare traditional yet contemporary dishes using pinchos and cooking methods that bring out the aroma of wood.
