The fourth-generation head chef of Kawaki. Born into a family whose ancestors have been shipowners of Kitamae ships for generations, but also run restaurants. He has been familiar with Echizen crab since childhood, having Seiko crab as a daily snack. He is a qualified middleman and only uses crabs that he has procured with a keen eye. He knows crabs inside out, adjusting the timing of killing in fresh water and the degree of boiling depending on the crab's maturity and characteristics, such as 18-year-old or 20-year-old crabs, and is able to serve any crab in the best condition possible.

Kawaki is located near Mikuni Port, which is famous for its fresh Echizen crabs and sweet shrimp. When it was founded in the Meiji era, it mainly served river fish dishes, but when ships began to travel not only to nearby waters but also to distant seas, it became a restaurant specializing in Echizen crabs. In this Japanese-style space that gives a sense of the history and tradition that has been built up over the years, there are four private rooms. At Kawaki, which shows a different side with each season, you are sure to be able to fully enjoy the charm of Mikuni, which is rich in the bounty of the sea.

Among Echizen crabs, there are those that meet the highest standards in both size and quality and are presented to the Imperial Family, known as "Imperial Crab." At Kawaki, you can enjoy extra-large Echizen crabs that are over 15 years old. When customers arrive at the restaurant, they start boiling the crabs, and while they're waiting for them to be cooked, they serve ingredients from Echizen Mikuni, which is rich in the bounty of the sea, such as rock seaweed and sweet shrimp. They also provide sake to drink before eating the crab. You won't be able to help but be amazed by the vivid flavor of the freshly boiled Echizen crab.
The key is the doneness and saltiness. I devoured the boiled crab in a simple yet delicious way, experiencing the essence of crab.
