Teruzo Matsuyama. After graduating from high school, he went on to study at a technical school for automobiles and became an engineer. He then opened a Takoyaki restaurant, which quickly became popular in Saga, a place he had no connection to. At the age of 25, he decided to become a chef, and at the age of 30, he opened "Oryori Matsuyama." He has received one star in the Michelin Guide Fukuoka for two consecutive years. He has also won bronze and silver awards at Tabelog Awards and received the Goët Millau 3 Toques award. He also puts a lot of effort into food education for children.

The delicious taste of budding snow, the coolness of a clear stream with young sweetfish leaping about, the taste of wild strawberries enjoying the bounty of the harvest, the fine taste of cold weather enduring the sun as its buds bloom... We carefully source the best seasonal ingredients from each region and season, and while respecting the traditions of Japanese cuisine, we use young and innovative ideas to create dishes that are a delight for the eyes and a surprise for the tongue. Making the most of the goodness of each ingredient, weaving the threads of the ingredients together is a Japanese artistic weaving.
