ChefHagi Harutomo: A chef working hand in hand with producers
Born in Iwaki, Fukushima Prefecture in 1976. After graduating from culinary school, he trained in France and Tokyo, and opened the French cuisine Restaurants "Belcourt" in 2000. In 2011, following the Great East Japan Earthquake, he renamed the restaurant to its current name and changed his style to one where he personally introduces the ingredients and does all the cooking. In 2013, he participated in a cooking fair held in Paris, where he cooked for the President of France and the Prince of Monaco at the palace. He was awarded the "Culinary Masters Silver Award" by the Ministry of Agriculture, Forestry and Fisheries.
Food Spreading Fukushima's excellent ingredients to the world
In addition to sourcing excellent ingredients directly from producers in Fukushima Prefecture, the restaurant takes advantage of its location, 15 minutes from the fishing port and 10 minutes from the fields, to use ingredients that are extremely fresh. A symbolic example is the sardines that he purchases at auction himself. They are quick to spoil and considered a cheap fish locally, but Hagi says that if they are extremely fresh, they are "a treasure that rivals any high-end fish." Of course, fatty sardines are a sure hit, but you'll also be amazed at the deliciousness of lean sardines. They are the ultimate luxury that you'll never get to experience in the city.
Others Wood-fired cooking brings out the best in fresh ingredients
One cooking method that they actively incorporate is wood-grilling. By grilling fish and other ingredients directly over the gentle flames of burning oak wood, the surface becomes fragrant and the fresh flavors are locked inside. Depending on the ingredient, pruned grape vines are sometimes used as the finishing touch to add flavor. As Hagi says, "Wood is an ingredient, too. The aroma of wood is like a sauce," the grilled fish becomes an exceptional dish with a nostalgic, comforting aroma.

...to enhance their flavor, but in recent years, they have been thoroughly committed to cooking that makes the most of the freshness of fish that have just been landed and vegetables, saying, "We want to cherish the life of 'freshness,' which cannot be reversed." For example, they will grill yellowtail caught that morning over a firewood grill and serve it with Jerusalem artichoke puree and fermented Chinese cabbage instead of a sauce.
