The soup stock that is the lifeblood of Monja-yaki is a "specially selected Japanese-style soup stock" based on a recipe from one of Kanagawa Prefecture's leading Japanese cuisine restaurants that has been awarded one Michelin star. We carefully prepare the ingredients every day, paying particular attention to temperature, time, and timing, to bring out the flavor components to the highest level. The taste is so delicious that you can feel it directly on your tongue. This highly fragrant soup stock adds an elegant Japanese essence to our Monja-yaki.
