At erre, we offer dishes themed around the roots of everything - fire, water, earth, and air - while reconsidering the origins of cooking methods that were once used to create and cherish cuisine. Cooking uses firewood as a heat source to heat ingredients. Cooking uses water, which has been cherished as a wisdom for using ingredients without waste, to breathe life back into them. Fermented cooking reinvents ingredients together with the microorganisms in the soil. Bread is given a rich flavor by the power of air, which expands ingredients many times over. Although it takes time, we have reexamined cooking methods that have stimulated people's sense of deliciousness, and we hope you will enjoy the cooking process while you eat.
erreでは、かつて料理が生まれ大切にされてきた調理法の起源を再考しながら、 すべての根源である火・水・土・空気をテーマにした料理を提供しております。 薪を熱源として、食材に「火」をいれる料理。 食材を無駄なく使う知恵として大切にされてきた「水」で、食材に命を吹き返す煮炊き料理。 「土」のなかの微生物とともに、食材を生まれ変わらせる発酵料理。 食材を何倍にも膨らませる「空気」のちからで、豊かな風味に変えるパン。 手間はかかるけれど、人の「おいしい」を刺激してきた調理方法を今一度見直し、 その調理の過程も愉しんでいただきながら召し上がっていただけます。
