「明石スタイル」の独自の手法で調理された料理と鮨は、「甘味」、「塩味」、「酸味」、「苦味」、そして食材の「旨み」が見事なバランスで融合し、絶品の味わいを楽しむことができました。
頂いたおつまみには、鯛、蛸、鰆、あこう(キジハタ)、焼き穴子、鯛皮、穴子たくあん、鯛のカマ焼き、中落ちトロ、いかげそ酒盗和え、茶碗蒸しがあり、握りではコウイカ(ハリイカ)、ヒラメ、鰤、鮪、雲丹、車海老、鯖、大トロ、のどぐろをいただきました。
味わったお酒は、黒龍、明石鯛、春鹿。
これらの組み合わせは大将にお任せして出された伝統の明石スタイルの料理の中でも焼き穴子が絶品でした。数々の料理本当に美味しく楽しむことができました。
