Born in Shiga Prefecture in 1977. Japanese Cuisine While training at a restaurant and kappo, he obtained a chef's license, a fugu chef's license, and a Japan sake tasting sake master's license. After that, he joined [Kyo YUNOHANA Resort Suisen], where he served as the head chef for five years from the time of opening. Since this time, he has continued to maintain the spirit of thoughtful cuisine and warm hospitality for each guest, and this belief is also the raison d'être of the current restaurant [Higashiyama Yoshitoshi], who has become independent after his long-cherished wish has come true.

The restaurant serves up creative dishes based on a different theme each month, based on the traditional Japanese techniques it has cultivated. This grand challenge involving a wide variety of genres would not be possible without a genuine passion for cooking. For example, to get to the bottom of why Nihachi soba is said to be so delicious, Suzuki takes it for granted that he will try out different ratios himself. His never-ending desire to learn, such as the heating temperature of each ingredient and the effective use of seasonings, is sublimated into a deep understanding of cooking. Passing through the playful nameplate, which is purposely hidden by a white noren curtain, you are greeted by the cheerful smiles of the staff.
