噂に聞いていたジビエの店Gibier MIYAMAに初訪問。祇園の四条通りから少し上がった小路にある。
ここの特徴はコースが28,000円なのだが、4品だけがその日に決まっている料理、その他の料理はリストから好きなものをオーダーするという仕組み。今回はちゃんと理解していなくて、時間が2時間弱しかなく失敗。時間制限があるわけでもないので、次回はもう少しゆっくり来るのが正解。
全体としては、クオリティーも高く、絶対に満足はできる店だが、あまり少食の人が来るとそれぞれが軽い料理ではないのでコスパが合いにくいかも。逆に食べれる人はかなりの満足度になるはず。
まずは決まっている4品
特上鹿タラゴン パルメジャーノ。鹿肉にタラゴンを加えたパテドカンパーニュにパルメジャーを削る。
猪肉とさつま芋のニョッキ。猪肉の脂の質が良い。
きじ肉のミンチをほうれん草で包んで、きじのスープと柚子で
月の輪熊のハンバーグにプラータチーズ。デミグラスソースに焼きたてパンを付けて食べる。
飲み物はシャンパンと赤ワインで
ここからがアラカルトで好きなだけオーダー可能。
今回は以下の6品をオーダーし、2人でシェアしながら頂いたが、これでかなり満腹になる。ジビエとしてあまりクセが強い料理ではないので、安心してオーダーできる。
特上鹿のカツレツ。この鹿肉はかなり品質が良く、今までで一番
芹と三つ葉とタラコのサラダ
スパイスを使った猪肉と春菊の春巻。春菊のペイストとパルメジャーノで。
月の輪熊と天然なめこの熊鍋。この熊肉は品質がそこまで良くないと感じた。
鰻とジャガイモのパイ包みを黒トリュフを使ったソースで
きじの炭火焼きを実山椒のソースで
〆は店のおすすめを聞く。
猪の焼豚を使ったチャーシュー麺。かえしは新福菜館のかえしらしく、麺も好みのストレート細麺。これはマスト。
もう一品は鶉ミンチと日野菜の焼き飯。
ここで満腹でギブアップ。〆のカレーライスやおこわ等に未練を残しつつ、次回への楽しみに残す。
口直しに苺のジェラートとコーヒーで終了
