This technique was brought across the ocean from Japan and refined at a Michelin-starred Restaurants. Chef Takahiro Shiba, a Saitama-born chef with such a background, served as the head chef at a famous restaurant in Karuizawa before becoming the executive chef of Legend Karuizawa in 2023. His culinary career began at the young age of 22 when he first moved to France, and he has experience working at famous restaurants in France and Italy. Please enjoy this masterpiece created by Mr. Hiroshi Shiba, who has dedicated his life to this culinary endeavor.
